As much as we all love tomatillo salsa, Tyler and I wanted to figure out another way to use the plethora of tomatillos we've received this summer.  And find another use for them we did.   I was a little skeptical when making the Tomatillo Gazpacho found at this website: http://www.eatingwell.com/recipes/tomatillo_gazpacho.html, but MAN- it was INCREDIBLE!!!!  I loved the way the different flavors combined- olives, shrimp, avocado, and tangy-sweet tomatillos...come ON!  It was fresh and flavorful.  So yummy.

Here are a couple of notes/adjustments on how I made it:

-I only used 1 jalapeño (it said you could use one or two, but I used one) and it was plenty spicy for us.

-I used a mix of black and green olives rather than just green ones, and I thought the different flavors were awesome.  But I'm sure only green would be good too.
